This variety of Hericium erinaceus can be cultivated in warmer weather and will fruit in temperatures ranging from 65 to 85F. It also produces spectacular pom poms. The taste and texture have been compared to crab or lobster in taste and is delicious when sauteed. Lion's Mane has been shown to support brain health.
